Germination breaks down the nutrient-binding phytic acid, resulting in higher bioavailability of the iron, calcium, magnesium, and zinc contained in the grain. Enzyme inhibitors (protease inhibitors) are broken down, allowing the protein contained in the grain to be optimally utilized. The fiber content ensures a long-lasting feeling of satiety.
