How is yeast produced?
Yeast refers to fungal organisms that specialize in carbohydrates and grow on them. Yeast strains, which are important for food production, feed on sugar. They reproduce by budding/division and are only visible under a microscope. Commercial baking yeast originated in beer, hence its name: Saccharomyces cerevisiae = "sugar fungus of beer."
What is the difference between organic yeast and conventionally produced yeast?
Only raw materials from organic farming may be used for organic yeast. A nutrient solution made from organic molasses and clean spring water serves as "food" for the organic yeast. No inorganic nitrogen, sulfuric acid, or ammonia may be used. Synthetic defoamers are also prohibited. All microorganisms and raw materials used are guaranteed GMO-free (genetically modified organism-free). Organic sunflower blossoms are used instead of artificial defoamers. It is not necessary to wash the organic yeast, which saves resources and protects nature. Steam is used for sterilization, so no disinfectants are used. The cells of organic yeast grow more slowly and have a higher demand for raw materials. Therefore, the yield is lower and the price is higher than that of conventional yeast.

Organic yeast powder is not a by-product of brewer's yeast production!
Conventional production: One of the most common products on the market is brewer's yeast. It is now cultivated from pure yeast under laboratory conditions and is then typically used in fermentation and beer brewing. At the end of the process, it is usually filtered out of the beer (= waste product). Chemical nitrogen sources such as ammonia, ammonium salts and alkalis, various acids (including sulfuric acid), synthetic vitamins and growth substances, and synthetic defoamers are used in the production of conventional yeast. Conventional yeast must be washed several times after fermentation to remove unpleasant flavors and odors. The wastewater is heavily contaminated and difficult to clean. In order for the yeast to multiply and grow, it must be fed regularly. A solution of water and sugar is used for this purpose. Molasses, a waste product of the sugar beet industry, is mainly used as a sugar nutrient medium. Manufacturers add the necessary nitrogen in inorganic form – essentially as artificial fertilizer. Brewer's yeast, which is preserved by drying (heating) and sold as a powder, tablets, or flakes, is rich in protein, minerals, and B vitamins, but the heat-sensitive enzymes are usually destroyed by the drying process.
Caution! If your dog has problems with elevated uric acid levels, it is best to avoid yeast products. Dried yeast contains large amounts of purines, which are converted into uric acid in the body.
